    Have to agree if you want something like bacon right, do it yourself.

    This was a pretty good smoke run I did awhile back.

    Ingredients:
    A home raised Pig
    Some brine
    Apple wood
    One bottle of good red wine consumed while tending the smoker

    I've had a little practice. Most of this batch will be done on a meat slicer, I just didn't want to wait!

    I have a slicer too, but after looking at your knife work I was embarrassed to admit it. :)

    Was it a brine, or dry cure that you used? I tried a dry cure awhile back and it was really salty.
