Awesome picture. It must take a well coordinated hand, a sharp eye, and sharp knife to get such uniform slices.
The first thing I noticed was his knife skills, but I'm not suprised at all knowing his lineage.
I've had a little practice. Most of this batch will be done on a meat slicer, I just didn't want to wait!
I have a slicer too, but after looking at your knife work I was embarrassed to admit it.
Was it a brine, or dry cure that you used? I tried a dry cure awhile back and it was really salty.
